Acacias is a selection of the best coffees from across what was once known as the Central Province. The 2010 Constitution of Kenya created counties as the new geographical units of devolved government and the previous Provinces were scrapped. While still referred to as the Central Province, it has a strong reputation for quality coffee growing. To ensure uncontrolled fermentation does not occur, the coffee bean is handpicked when it is ripe and then brought to the mill the same day, where it is sorted again and then pulped. In what is known as the "Kenyan" style, river water is used for processing and recirculated before disposal, the coffee is then sent out to soak in tanks for an additional 8-16 hours under clean water. This helps bring out clarity and prolongs the acidity before it's dried under the sun.
